2½ cup potato water (warm water w/2 Tbsp instant potato flakes)
1 cup mashed potato (~ 2 servings)
⅔ cup sugar
1 tsp salt
1 egg, beaten
½ cup melted shortening/butter

1 Tbsp instant yeast
~7 cup flour
*TO FINISH (approx. amounts)
½ cup soft butter
butter icing
1 cup chopped nuts (walnuts or almonds)

Directions:
Directions:
Combine first 7 ingredients; work in yeast & flour. Follow pkg directions if using instant mashed potatoes. Knead until smooth & soft but not sticky.
Let rise ½ hr. Punch down, let rise again ½ hr.
Grease counter & hands, pat dough down to ½”, then spread with softened butter.
Roll like a jelly roll; cut about ½" thick & place on cookie sheet pans. Rise 1 hour.
Bake at 375 - 400ºF for 15-20 minutes.
Frost with butter icing when almost cooled, and then sprinkle chopped walnuts or flaked almonds on top.
