Boned chicken breasts
Salt and pepper to taste
Fresh lemon juice
Flour to coat
Egg beaten with a little water
Soft bread crumbs
Parmesan cheese
Clarified butter for browning chicken
Minced parsley

Directions:
Directions:
Sprinkle chicken breasts with salt, pepper and lemon juice. Flatten them slightly. Dip in flour to coat. Dip in egg beaten with a little water. Then dip in soft bread crumbs and Parmesan cheese. Mash crumbs in gently with hands. Let "set" for 30 minutes. Brown in clarified butter (about 7 minutes). Add remaining lemon juice and minced parsley to pan drippings, and pour over chicken to serve.

This recipe had to be included because it makes a historic moment in Bob's life. Bob was well-know not to eat chicken - or anything with feathers --until he ate the results of this recipe. Bill and Bertha Toole have long been friends of Jim's parents, James and Flo Bennett. We were guests of Frann and Jim at Isle of Palms one year when James and Flo were there, and Bill and Bertha joined us. Bill graciously prepared a gourmet meal, and this chicken was the star of the show. It marked the first time Bob had ever eaten - and enjoyed - chicken. Actually, it became one of his favorite dishes, and we had it often. Incidentally, we celebrated Bill's and Bob's birthdays that evening. They were both born on August 5, 1926.
