1 C. whipping cream
1 No. 303 (16 oz.) can sour pitted red cherries packed in water
1 pkg. cherry flavored gelatin
1 Tbsp. lemon juice
1 8-oz. pkg. softened cream cheese
2 Tbsp. granulated sugar
1/4 C. milk
1/2 tsp. almond extract

Directions:
Drain juice from cherries, add enough water to make 1 cup. Bring juice to a boil. Pour hot juice over gelatin in a bowl. Stir until gelatin is dissolved. Add lemon juice; chill until the consistency of an unbeaten egg whites. While gelatin chills, fluff cheese with 1/4 C. milk and sugar. Then beat chilled gelatin until frothy. Beat whipping cream until thick (if desired, 1 Tbsp. granulated sugar may be added for a sweeter pie). Fold cream and cherries into gelatin mixture along with almond extract. Place 1/3 cherry mixture in baked and cooled pie shell (or graham cracker crust). Spoon on half of the cheese mixture. Top with half of the remaining cherry filling. Spoon on rest of cheese and top with rest of cherry filling. Chill.
