Crisco oil for frying
Flour mixture as follows:
2 1/2 cups of all purpose flour
2 T chili powder, 1 T of salt and Black Pepper
1 T onion power and 1 T garlic powder.

Steaks:
2 cups of flour mixture
1 cup buttermilk or evaporated milk
1 extra large egg lightly beaten
12 tenderized eye of the round steaks

Black Pepper Milk gravy
1/3 cup of salted butter
5Tbsp of all purpose flour
2 tsp of :kosher salt
4 tsp of coarsely ground black pepper

In a bowl, stir together flour, salt, chili powder, onion powder and garlic powder. Mix very well. set aside.
In a deep cast iron skillet pour enough oil to have a about an 1 inch in depth. Heat to about 370 degrees. While your oil is getting hot. In another bowl wisk together buttermilk and egg. Line everything up:
steaks, flour and milk mixtures. Dip steak in flour mixture, shake off excess then put steak in buttermilk mixture. Allow excess to drip off. then dip in flour again. Evenly drudge batter so it is dry on the outside. (Sometimes I shake a little paprika on the coated steals.
Slide two or three steaks into hot oil, being careful not to crowd them. The temperature of the oil will fall instantly
