Watermelon Bomb Recipe

3 quarts Vanilla Ice Cream
3 quarts Lime Sherbet
1 cup small chocolate chips
1 small bottle green food color
1 pickle (cut off ends only)

Wear Gloves when making this fun dessert!
1. Let Raspberry Sherbet thaw just until you can mold it. Fill up a large mixing bowl leaving the top flat. Put into the freezer to let harden for 20 minutes. Take it out and form oblong base on cardboard covered with aluminum foil. This will be the base of the watermelon. Just before you put the raspberry sherbet down on foil covered cardboard, sprinkle small chocolate chips into bottom base of sherbet. Push chips into sherbet. These will be the "seeds" of the watermelon bomb. Put into freezer and let it harden for at least an hour..
2. Thaw out vanilla ice cream just until you can mold. Take vanilla and form a second layer around the raspberry sherbet shell. Make vanilla layer about 3/4 to 1 inch. This will be the "white rind" between watermelon "meat" and outside of the melon. Put into freezer to harden.
3. Next, let lime sherbet thaw out just a bit. Mold lime sherbet layer over entire shell to form the outside of the watermelon. Make this layer about 1/2- 3/4 inch thick. This is the final outside shell of the watermelon bomb. Put into freezer to harden for about 45 minutes.
4. Take watermelon bomb out and put a little bit of the green food color on the watermelon bomb. Using a spatula, make irregular lines horizontally on the watermelon bomb to imitate the look of a real watermelon. Blend in food color to have light and dark shaded lines that look like a real watermelon. Finally, cut a small end of the pickle and bury all except the tiny end into the back end of the watermelon bomb. This will represent the
"stem" of the watermelon where it was picked from the patch.
Carefully cover with wax paper and put the entire watermelon bomb into the freezer for several hours or overnight to set the entire creation. When it hardens, cover the entire "bomb" with aluminum foil to keep sherbet and ice cream fresh. It is very important that you let the watermelon bomb freeze solidly. If you do not, it will mush together when you try to cut it.
5. Now, when you cut the watermelon bomb into slices, you will have large slices that look like a real watermelon with the chocolate chips representing the seeds, the raspberry sherbet being the red meat of the melon, the vanilla ice cream represents the rind and the green sherbet representing the outside of the melon.

This creation takes much patience!! Do not try to rush. Take the time to let each layer harden in between and you will have a fantastic creation. Make this at least one day before serving!! This is always a wonderful hit and fun to eat!
