6 tbsp. chilled butter
1 c. sifted all purpose flour
2 1/2 tbsp. light cream


Almond Creme:
3/4 c. sifted powered sugar
1 tbsp. soft butter
1/8 tsp. almond extract
1 tbsp. light cream

Directions:
Directions:
With fork, cut butter into flour until pieces are the size of small peas.

Sprinkle 1 tbsp. of cream over the part of the mixture. Repeat until all is mixed.

Divide in half. On floured surface, roll to 1/8 inch. Cut into rounds. Dip one side in sugar.

Place sugar side up, 1/2 inch apart on ungreased cookie sheet. Prick each cookie in 4 parallel rows. Bake at 375 degrees about 8 minutes until golden and puffy.

Sandwich cooled cookies with almond cream.

Almond creme:

Thoroughly combine the powdered sugar, soft butter, almond extract and light cream. Make it soft enough for spreading.

When we had our first house in Bourbonnais, I met a neighbor that loved to cook.....she gave this cookie recipe to me! It is a great Christmas cookie that makes a lot of hits....takes a little time, but very good!
