"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
4 apples – peeled, cored and chopped
¾ cup water or apple juice
¼ cup white sugar
½ teaspoon ground cinnamon

Directions:
Directions:
1. Peel, core and cut apples into small pieces
2. Combine apples, water, sugar, and cinnamon into an electic skillet. (You can use a heavy skillet or saucepan on the stove if you do not have a skillet.)
3. Cover, and cook over medium heat for 15 to 20 minutes, or until apples are soft. (Check occasionally to stir and make sure there is still some liquid in the skillet as it cooks. You may have to add some, but not too much or the applesauce will be too thin.)
4. Allow to cool, then mash with a fork or potato masher.

Personal Notes:
With children, it is fun to use a peeler/corer. Put the apple on the machine and let the children turn the handle. They can cut the apple into small pieces with a plastic knife with a serated blade after it is peeled and cored. It won't hurt if small bits of peel are still on the apple. This makes 4-6 servings.
