6-8 large size flour tortillas
1 lb. ground beef
1 onion
1/2 green bell pepper
2 stocks chopped celery
3/4 round Monterey Jack cheese
small bottle sliced mushrooms
1 pint I.M.O. or sour cream
1 can cream of chicken soup
1/2 can diced green chilies
1 can small sliced black olives

Directions:
Directions:
Brown ground beef and season. Add onion, bell pepper, and celery. Grate cheese. Add mushrooms to meat mixture and heat through. Roll meat mixture in tortillas and place in a greased casserole dish.
To make sauce; Mix sour cream, cream of chicken soup, green chilies, and olives. Pour sauce over top of enchiladas and sprinkle with grated cheese. Cover with tin foil and bake at 350º for 25-30 minutes.
