1 lb. bacon - Broiled until 3/4 done - almost crispy, but still pliable.
8 slices white bread
2 cups finely shredded Co-Jack cheese
8 slices American Cheese
Butter
Toothpicks
Directions:
Directions:
Place foil on cookie sheet. Place bacon on foil and broil until bacon is 3/4 done. Bacon should begin to get crispy, but yet still be pliable/bendable.
Let bacon cool for 1 minute.
On second cookie sheet covered with foil, place 8 slices bread.
Lightly butter bread. Put 1 slice of American cheese on top of each buttered bread. Next, place 1 slice of bacon cut in half in middle of bread on top of sliced cheese. Sprinkle about 1/4 cup shredded cheese in middle of bacon. Take bread and gently fold together sideways. Wrap
two additional pieces of bacon around bread and secure with toothpicks.
Place Bacon Surprise back into broiler oven for only about 1-2 minutes. (Just enough time for the bread to crisp and the cheese to melt.)
