1 lb. boneless, skinless chicken breast, cut into 1 inch pieces
1/4 cup soy sauce
1/4 cup honey
3 tbsp. chili sauce
1/2 tsp ginger
1/4 tsp garlic powder
1 cup chicken broth
1 tbsp. cornstarch
4 cups coleslaw mix(I also add some onion, peppers, etc)
1 cup salted cashew nuts

Directions:

Mix together soy sauce, honey, 2 tbsp. veg oil, chili sauce, ginger and garlic powder. Pour over chicken and toss to coat. Cover and refrigerate for at least 1 hour. Mix together chicken broth and cornstarch until smooth. Set aside.
Heat large skillet over medium heat. Add chicken and brown a little, then add marinade and bring to a simmer. Remove chicken and add coleslaw and any other vegetables. Stir in broth mixture; bring to a boil.. Reduce heat and simmer until sauce thickens. Stir chicken back in and add cashews right at the end and serve with hot rice..
