2 c. rhubarb, diced
1 c. sugar
1/2 c. butter
1 c. sugar (or honey)
2 eggs
1 c. buttermilk
1 t. vanilla
2 c. flour
1 t. soda
1/2 t. salt
1 t. cinnamon
1/2 c. coconut
1/2 c. raisins
1/2 c. nuts, chopped

Directions:
Directions:
Combine rhubarb with 1 c. sugar; set aside. Cream butter with 1 c. sugar; add eggs. Stir in dry ingredients alternately with buttermilk and vanilla. Fold in coconut, raisins, nuts and rhubarb. Turn into large tin. Bake at 350* for 35 - 45 minutes.
