Basic Ingredients:
1 c. white flour
1 c. whole wheat flour
½ c. bran (or oatmeal)
1 tsp. salt
½ tsp. baking soda
½ c. granulated Splenda or similar sweetener
1 Tbsp. baking powder
2 large eggs
1 c. buttermilk (or plain yogurt)
½ c. canola oil
1 tsp. vanilla
1 Tbsp. molasses

As you like ingredients
1 c. or so of one of the following or a mixture of them:
Berries – blueberries, raspberries, blackberries
Diced apples
Dried cranberries
Nuts, pumpkinseeds
Or anything else you like
Also some cinnamon, orange or lemon zest are good additions.

Directions:
Spray muffin tins with canola spray. In a large bowl, whisk together all the dry ingredients. In a separate bowl, whisk together the wet ingredients. Add the wet ingredients to the dry and mix with a spoon until well combined. Fold in the “as you like it” ingredients.
Divide batter equally to make 12 muffins.
Bake at 350º for 20 minutes or until a toothpick inserted into the middle of a muffin comes out dry.
