4 Cups Cooked Brown Rice
1 large onion, diced
1 red bell pepper, diced
1 C diced celery
1 T Olive Oil
1/2 pound turkey smoked sausage, finely diced
1 1/2 tsp. poultry seasoning
1/2 tsp. rubbed sage
1/2 tsp. black pepper
1 C fat-free, reduced-sodium chicken broth
1/3 C sweetened, dried cranberries
1/4 C toasted soy nuts

Directions:
In a large skillet, sauté onions, bell pepper and celery in olive oil. When vegetables are beginning to soften, add diced smoked sausage and continue to cook until sausage begins to brown. Add poultry seasoning, sage and pepper; toss to coat. Add cooked brown rice and mix well, adding chicken broth to moisten. Cook for several minutes to heat through. Remove from heat; add cranberries and soy nuts and toss to mix.

This is a "Healthy Heart" recipe that I received in Louisiana. The Rice Dressing is a staple for most Louisiana holiday tables but this is a light version! It is very good.
