2 T. Bacon fat or oil
1/2 lb. ground sausage
3 T. flour
1 1/4 c. milk or half and half (will need more)
Salt and pepper to taste

Directions:
Directions:
Medium high heat with cast iron skillet.
Brown sausage and add bacon fat. Can add thyme or sage.
Whisk in flour to create a roux and cook a bit.
Add milk and stir. Allow to come to boil then turn down heat to low. Season to taste and add more milk if needed to thin.
Can add red pepper if like
