1 c. butter or margarine
1 1/2 c. packed brown sugar
1 c. sugar
2 1/2 c. creamy peanut butter, divided
1 egg
1 1/2 t. vanilla extract
2 1/2 c. quick cooking oats
2 c. flour
1 t. baking soda
1/2 t. salt
1 can chocolate frosting - recommend dark chocolate or triple chocolate

In a large mixing bowl, cream butter and sugars. Add 1 c. peanut butter, egg and vanilla; mix well. Combine oats, flour, baking soda and salt; add to the creamed mixture. Spread into a greased 15" x 10" x 1" baking pan (9x13 ok also - must cook longer though).

Bake at 350º for 13-17 minutes or until golden brown. Cool slightly on a wire rack, about 12 minutes. Spread with remaining peanut butter. Cool completely. (I put it in the freezer so the peanut butter will harden) Spread chocolate frosting over the cooled peanut butter layer. Cut into bars.
