2 lbs. cubed pork
2 cans of whole tomatoes
2 14 0z cans White Hominy
2 med. onion chopped
2 cans Rotel tomatoes
1 can of stewed tomatoes
3 garlic cloves minced

Directions:
Directions:
Brown the pork. Sauté the onion and garlic Combine all ingredients in a Dutch Oven or slow cooker. Slow cook until pork is fork tender. about 1 1/2 - 2 hours.
~ Garnish with choice of cChopped lettuce, sliced avocado, shredded cheese, sour creme, tortilla chips etc...
