10 lb. chitterlings
crushed red peppers to taste
1/4 green pepper (strips)
ground black pepper to taste
1 small onion
1 small potato
1 clove garlic
salt to taste

Directions:
Directions:
Carefully clean chitterlings in warm water, removing all linings, dirt and fat. Cook in large pot of water; add all ingredients. Cover and simmer for 3 hours or until done. Pour off most of liquid. Discard potato. Cut chitterlings into bite-size pieces.
