1 c. corn meal
1 T. flour
< 1 t. salt
1 c. cold water
2 c. boiling water

Directions:
Directions:
Combine corn meal, flour and salt. Add cold water and stir. Gradually add to boiling water. When thoroughly mixed, put into heavy sauce pan and cook cover, over low heat for 2 hours.
**The cold water keeps it from getting lumpy and the flour from getting crumbly.

Option 1:
Serve thoroughly cooked hot mush with sugar and milk.

Option 2:
Pour into loaf pans and refrigerate until set and cold. Cut off 1/4" slices and fry to a golden brown in hot oil. Serve "Fried Mush" warm with butter and syrup. Thicker slices take a little longer to fry and have more of the porridge taste. Thinner slices are crispy with just a hint of porridge taste.

Usually double or triple recipe if going to the bother of making this. Refrigerated cold mush can be kept for quite awhile before having to use it.
