Ingredients: 1 3-lb. Chicken, Quartered 1 c. Dry White Wine 1 tbsp. Lemon Juice 1/4 tsp. Black Pepper 1/2 tsp. Paprika 1/4 c. Melted Butter 1/4 c. Finely Chopped Green Onions 3/4 tsp. Salt 1/4 c. Minced Parsley

Directions:Place chicken, skin side down, in large casserole. Blend all other ingredients together and pour over the chicken. Cover with foil and bake 1-hour in 325º oven. Remove foil. Turn chicken skin side up; increase oven temperature to 375º and bake 30-minutes, basting two to three times. Increase oven temperature to 425º and bake for a final 30-minutes, basting frequently. (Total cook time is 2-hours.) |

Notes: This is a family favorite. I've been preparing this for a special birthday meal for more than 20 years and it is appreciated as much today as the first time I made it. Use the drippings to make a delicious gravy, adding wine and a thickener as needed. Add a side of rice, some drop biscuits, and a vegetable and you're all set.
