4 pound boneless pork roast
1/2 teaspoon pepper
2 tablespoons olive oil
1 cup orange juice
1/2 cup chicken stock
2 tablespoons brown sugar
1 teaspoon orange zest
3/4 cup champagne

Directions:
Directions:
Cut excess fat off pork. Cut into 2-inch cubes. Cook pork in hot olive oil until well browned.
Combine juice, stock, brown sugar, zest, and champagne. Add to pork. Heat until boiling.
Reduce heat and simmer at least two hours, turning occasionally. Remove the lid and cook until the liquid is reduced by half.
Remove pork and shred with two forks. Return to cooking liquid.
