1 can kidney beans
1 can coconut milk
2 cups rice
1 small onion
1 clove garlic, minced
1/4 tsp. dried thyme
1 scotch bonnet pepper

Directions:
Directions:
Combine the liquid from the beans with the coconut milk and add water as needed to total 4 cups of liquid. Bring liquid, onion, garlic, and thyme to a boil. Stir in rice for 1 minute then reduce heat to med-low. Place pepper on top and cover. Cook covered for 30 minutes.
