1 cup white vinegar
1/4 cup dark soy sauce
1/4 cup minced garlic
1 tsp. ground pepper
5 or 6 whole peppercorns
5 or 6 bay leaves
1 lb. boneless, skinless chicken thighs, cut into 1-2 inch pieces

Mix vinegar, soy sauce, and spices. Pour over meat in a glass bowl. Cover and refrigerate for 1-2 hours. Place meat and marinade in a large pan or Dutch oven. Cover and cook over medium to med-high heat for 30-45 minutes or until meat is tender. (Filipino cooks advise not to stir until after the mixture comes to a boil. They say it makes it bitter if you do.) Once the chicken is cooked, uncover and continue cooking until liquid is reduced and thickened.
Serve over hot rice.
