Crab Cakes Recipe

Crab Cakes:
1 lb Maryland (Blue Claw) Lump Crab Meat
1 lb Maryland (Blue Claw) Crab Claw Meat (can use (“Special” Maryland crab meat as well)
½ cup Italian Seasoned bread crumbs
2 large eggs
~ ½ cup of Mayonnaise
2 teaspoons Worcestershire sauce
10 shakes of Hot Sauce (optional for a little spice)
2 medium onions- finely chopped
2 stalks celery - finely chopped
6 cloves garlic (minced)
6 tablespoons butter
4 tablespoons “Old Bay” seasoning
Pinch of salt
Canola Oil

Coating:
Eggs as needed for coating of crab cakes
Flour as needed for coating of crab cakes
Italian bread crumbs as needed for coating of crab cakes

Directions:
Directions:
Remove cartilage from crab meat
Chop Lump crab meat into smaller pieces appropriate for the size of the crab cake desired
Melt butter in sauté pan
Add hot sauce to butter
Add onions to pan to soften stir (about 3 minutes)
Add celery to pan and soften stir (about 2 minutes)
Add garlic to pan and soften stir (about 2 minutes)
You want these ingredients to be soft but not browned
In a bowl, mix ½ cup breadcrumbs, mayo, Worcestershire sauce, and seasonings.
Add onion, celery, and garlic mixture to bowl and mix
Gently but thoroughly add crabmeat to bowl
If mixture is too dry (won’t roll into a ball) add more mayo

Shape cakes into desired size and shape. The use of a 1/4 or 1/3, or ½ cup measure is a good way to keep them about the same size.

To Coat:
(This can get a little messy on your hands)
Dredge crab cake in flour
Dredge crab cake in egg wash
Dredge crab cake in Seasoned Italian bread crumbs

Fry Crab Cakes:
If you have a deep fryer, that is the preferred method but if not-
Add oil to frying pan to prevent cakes from sticking to the bottom of the pan
Heat oil to over 350ºF
Add crab cakes to frying pan
Fry about 5 minutes a side (a little less for smaller, thinner cakes, a little more for larger fatter cakes) until brown.
