4 lbs boneless pork shoulder butt or rib
2 Tb. cumin
2 Tb. chili powder
1 Tb. kosher salt
1 Tb. chili olive oil

2 chipotle peppers in adobo sauce, diced
5 cloves garlic, diced
1 large onion, diced
1 28 oz. can diced tomatoes
2 cups beef stock (or vegetable)

Preheat oven to 285 degrees.

Combine cumin, chili and salt and rub all over meat. Heat olive oil in dutch oven. Brown meat on all sides.
Add tomatoes, garlic, onion,chipotle peppers and broth. Bring to boil.

Cover and cook in oven for 2-3 hours until tender, turn occasionally
Let cool. Shred into large bowl, add some of the cooking liquid.
The remaining cooking liquid can be simmered on stove top until reduced and used as a dipping sauce..

When growing up in the San Francisco bay area there were always plenty of good Mexican restaurants to be found. Moving to England and then Bahrain proved to be a difficult task to find good Mexican food so I started creating my own dishes. We loved having big Mexican themed parties. David was in charge of margaritas and tequila, I was in charge of food.
This pulled pork recipe is great for make your own tacos with shredded cabbage, manchego cheese and Avocado salsa. I have also used it to make enchiladas and burritos.
