Notes: When growing up in the San Francisco bay area there were always plenty of good Mexican restaurants to be found. Moving to England and then Bahrain proved to be a difficult task to find good Mexican food so I started creating my own dishes. We loved having big Mexican themed parties. David was in charge of margaritas and tequila, I was in charge of food. This pulled pork recipe is great for make your own tacos with shredded cabbage, manchego cheese and Avocado salsa. I have also used it to make enchiladas and burritos.
