1 c. cornmeal
1/3 c. flour
sugar - less than 1/4 c., more than 1/8 c.
2 t. baking powder
3/4 t. salt
1/2 t. baking soda
2 eggs, beaten

*1 c. milk
*1/2 c. veg oil
*1 can (14 1/2 oz.) whole kernel corn, drained

* - may substitute the 3 starred ingredients above with 1 can (14 1/2 oz.) of creamed corn, NOT drained plus 1/3 c. milk

Directions:
Directions:
In a bowl, combine cornmeal, flour, sugar, baking powder, salt and baking soda; mix together thoroughly. In a small bowl, stir together eggs, milk and oil. Stir liquid mixture into dry ingredients just until blended. Fold in corn. Pour into a greased 8" x 8" or 9" x 9" pan. Bake at 400º for 25 minutes.
