6 cups water
9 cups cubed watermelon rind, skinned
4 cups sugar
1 cup white vinegar
1 T. whole cloves
1 T. whole allspice
6 sticks cinnamon

Directions:
Directions:
Remove outer skin and all pink flesh from the watermelon rinds and cut into 1" cubes. Heat water to boiling point in large kettle. Add watermelon rinds. Simmer until tender when pierced with a fork - 10 to 15 minutes. Drain completely and place in crock. Boil together the sugar, vinegar, cinnamon sticks, allspice and cloves. Pour over the rinds in the crock. Cook and let stand overnight.

SECOND DAY:
Drain the syrup off the watermelon cubes and reserve. Heat the syrup to boiling and pour over the watermelon cubes. Cool and let stand overnight.

THIRD DAY:
Repeat second day procedures.

FOURTH DAY:
Prepare jars and lids for canning.
Heat rind and syrup to boiling.
Put in jars and seal.
Process in water bath for 5 minutes.
