1/2 c. shortening
1 c. sugar
2 eggs
1 1/2 c. mashed ripe bananas (3 to 4 medium)
2 c. flour
1 c. quick cooking oats
1 t. baking soda
1 t. baking powder
1 t. salt
1/2 c. miniature semisweet chocolate chips

Directions:
Directions:
In a mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Add bananas; mix well. Combine flour, oats, baking soda, baking powder and salt; add to the creamed mixture. stirring just until moistened. Stir in chocolate chips. Pour into a greased 9" x 5" x 3" loaf pan. Bake at 350º for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

Use a metal loaf pan if possible. If using glass loaf pans, must lower temperature and decrease the time baked, otherwise the edges get too brown and hard.
