1 lb. extra lean ground beef
1 c. diced onion
1 c. diced carrott
1 c. diced celery
3 cloves garlic
30 oz. diced tomatoes
15 oz. can of red kidmey and great northern beans
15 oz tomato sauce
12 oz. V-8 juice
1 tbsp. white vinegar
1.5 tsp. salt
1 tsp. oregano
1 tsp. basil
1/2 tsp. pepper
1/2 tsp. thyme
1/2 lb. ditali pasta

Directions:
Directions:
1. Brown the beef in a large stock pot over medium heat. Drain and return to pan.
2. Add onion, carrot, celery, garlic, spices and saute for 10 minutes.
3. Add remaining ingredients , except the pasta and simmer for about an hour.
4. About 50 minutes into the simmering, cook pasta until slightly tough and add to the soup. The pasta will get soggy if you overcook it.
