2 gallons of cucumbers
peeled & cut into strips & pieces
remove seeds and seed bed
2 cups pickling lime
8 1/2 quarts water

Directions:

Put these ingredients in a large crock or enameled container.
DO NOT USE PLASTIC.
Let these ingredients soak for 24 hours. Drain the liquid off and discard. Rinse the cucumbers very well in cold water, changing the water many times.

1 cup vinegar
1 T. alum
small bottle of red food coloring
water to cover the pickles

In a large pot simmer the cucumbers for 2 hours in the ingredients listed above. After 2 hours, pour the liquid off and discard.

MAKE A SYRUP OF:

2 cups vinegar
2 cups water
6 or 8 sticks of cinnamon (broken)
1 - 10 oz. red hots 9 cinnamon candy)

Heat until the red hots have dissolved. Pour over the pickles in the crock or enameled pan and let set overnight.

For the next 3 days drain the syrup off and reheat and pour back over the pickles.
On the 4th day, heat the syrup and pickles together and pack in jars and seal.

This makes a large batch of syrup, you may need to adjust for the amount of cucumbers you have used.
