1/2 cup uncooked quick oatmeal
1/2 tsp. salt
1 cup boiling water
1/4 cup molasses
1/8 cup vegetable oil
1 pkg. dry yeast
1/4 cup warm water ( 110 - 115 degrees)
Approx. 3 cups flour

Have all ingredients and utensils at room temperature. Put oatmeal and salt in a large bowl. Add the boiling water and stir. Let stand for about 30 minutes or until lukewarm. Add molasses and oil and beat with a mixer for 1 to 2 minutes. Stir yeast into the warm water and let stand for 5 minutes. Add the yeast mixture and 1 cup flour to the oatmeal mixture. Beat with a mixer for 2 to 3 minutes. Let mixture 5 minutes. Stir in 1 1/2 cups flour.

At this point, you may need to add a little flour to the dough if it is too sticky. This may happen if the oatmeal-boiling mixture didn't cool enough.

Turn the dough into a floured board, (the remaining 1/2 cup flour). Knead the dough for about 10 minutes. Place the dough in a greased bowl. Cover and let rise until a little more than doubled. Form the dough into rolls and place on greased pans. Cover and let rise until double.

Bake in a 375 degree oven for 18 to 20 minutes. This recipe makes 12 to 18 rolls, depending on their size.
