Nonstick vegetable oil spray
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 cup finely ground yellow cornmeal
1 T. baking powder
2 tsp. fine sea salt
6 eggs
1 cup crème fraiche or sour cream
1 cup milk
1 stick + 1 T. unsalted butter, softened

Preheat the oven to 350 degrees. Spray a 9x12 baking pan with cooking spray. In a large bowl, stir together all of the dry ingredients until smooth. Beat the eggs; add the sour cream; mix until blended thoroughly. Pour this and the milk into the dry ingredients; mix well. Add the butter and stir until blended. Pour the batter into the pan and smooth the top. Bake for 35 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Cut into squares and serve warm. Serves 8.
