1/4 lb. butter flour
1 (5 lb.) roasting chicken 1/2 cup chopped ham
10 small garlic cloves1/4 tsp. thyme salt and pepper to taste
1 sprig parsley 2 oz. warm cognac
1 bay leaf 1 cup red wine

Directions:
Directions:
Cut chicken in serving pieces. Wash and dredge with flour. Brown chicken in large pan with melted butter. Put chicken and juice in a large casseroe and add ham, garlic, thyme, parsley, bay leaf and mushrooms; salt and pepper to taste. Pour cognac over chicken and light with match. When flame dies down, add red wine. Cover and bake at 275 degrees until tender, about 2 1/2 hours.
