3 tbsp. mayonnaise
1 1/2 tbsp. Old Bay
2 lbs. Maryland Rockfish fillets
1/2 stick butter
2 tbsp. flour
1 c. milk
2 tbsp. mayonnaise
2 tsp. mustard
1 lb. Maryland crab meat
salt and pepper to taste
Old Bay to taste
1/4 stick butter
1 c. crushed Ritz crackers or Panko bread crumbs)

Directions:

Mix mayonnaise and Old Bay together and spread on both sides of the fillets. Broil fish 4 minutes on each side and set aside. In a frying pan, melt butter, add flour, and stir until mixed. Add the milk, stirring constantly until thick. set aside to cool. When cool, add the mayonnaise, mustard, crab meat, salt, pepper, and Old Bay. fold together and place it on top of fillets. Make crumb coating by melting butter in a frying pan, stir in cracker crumbs until coated. Sprinkle on top of fish and crab meat and bake at 350º for 35 minutes.
