Ruby's Rice Recipe

1 ½ c. basmati rice
1 Tbsp. canola oil
1 tsp. salt
1 tsp. lemon juice

Rinse rice three times. Cover rice with water and scrub for about 2 minutes with both hands. Rinse rice three or four more times. Cover rice with water and let it soak while waiting for pot of water to boil. (10-15 minutes)

Fill large pot ¾ full of water, bring to boil.
Add the oil, salt, and lemon juice.
Add the rice and boil over medium-high heat. Do not stir the rice.
Test rice after 8 minutes. Break a grain in half and look for white circle in the center of the grain. If there is a white circle it will need to cook for a minute or 2 longer.
Rice will be done when the white circle is gone from center of grain and rice no longer has any crunch to it.
Once rice is done, drain in a colander. Make sure there is no water left in the pot or rice will continue to cook. Rice can be returned to the pot and set aside until your main dish is complete.


To try a different flavor of rice try adding:
1 cinnamon stick
4 cardamom pods
1 tsp. cumin seed
4 cloves

While Ruby was teaching us all how to make rice, she said that after we learned how to cook rice her way, we would never go back. She said that for those of us who use rice cookers, she could almost guarantee that we would go home and sell our rice cookers on eBay.
I did not believe her.
The following day, our rice cooker was sold online.
This is the only way to go when it comes to rice. I find this rice to be nice and evenly cooked. Very good!
