Spice rub (for chicken)
1 tsp. ginger paste
2 tsp. garlic paste
½ tsp. red chili powder

Butter chicken
1 lb. boneless skinless chicken
½ c. canola oil
1 c. onion chopped
½ tsp. cumin seeds
1 tsp. ginger paste
1 tsp. garlic paste
1 Tbsp. coriander powder
½ tsp. sugar
½ tsp. fenugreek leaves
1 tsp. salt
1 c. crushed tomato (thick)
½ tsp. red chili powder (we use ¼ t instead)
½ c. butter
½ c. whipping cream
1 tsp. garam masala
Fresh cilantro chopped

Directions:

Dice the chicken and mix with the spice rub and set aside for minimum 15 minutes.
Heat oil in a saucepan on medium low heat and par cook the chicken. Remove from pan and set aside.
In the same pan and oil, over medium heat, sauté the onions until just translucent.
Add the cumin seeds and ginger and garlic paste and sauté for about two or three minutes.
Add the coriander, sugar, fenugreek, salt, red chili powder and crushed tomato. Simmer until ingredients have fused. Once sauce has thickened, remove it from the heat.
Transfer sauce to a blender and blend until all the ingredients have reduced to a thick even sauce. Return to the pan.
Add the butter and chicken and juices to the mixture. Mix thoroughly on medium low heat until you have a smooth sauce.
Add the whipping cream and slow boil the mixture until the chicken is cooked.

Serve over rice and sprinkle garam masala and cilantro on top

This Butter Chicken is the without a doubt the best Butter Chicken I have ever tasted in my entire life. I will never order this dish in a restaurant again because really, nothing can compare to this right here.
