This makes a double crust. Halve it for a single crust!!

2-2/3 c. plain flour
1 tsp salt
2/3 c. vegetable oil (corn, safflower, canola, etc)
6 tbsp. whole milk

Use a 9 inch pie plate. (I always use corningware pie plates)
Spread two large sheets of waxed paper on counter or table. Tear off two more sheets and set aside.
In a large bowl mix flour and salt. Pour oil in a measuring cup and add milk.
Make a well in flour mixture, pour in oil mixture and stir with a spoon. Get your hands in there and see if it sticks together nicely into a ball. If too dry, add more oil (just a little at the time). If it is too greasy or wet, add more flour a little at a time. Mix briefly with hands, form into two equal balls.
Place ball on waxed paper, cover with other sheet of waxed paper, roll into a large circle. Repeat with other ball.
Place one circle of dough in pie plate. Add desired filling and cover with other circle of dough. Crimp edges together and cut a few slits on top to vent.
Bake 425º for about 30-40 minutes until browned as desired.
If using one crust (like for my chocolate pie!) , crimp edge of crust (makes it pretty, pour in filling and bake as recipe for other fillings require.
