1 (2 1/2-3 lb.) rabbit 2 tsp. salt
2-3 cup water 1/4 tsp. pickling spice
1/2 cup sugar flour
1 medium onion, sliced

Directions:
Directions:
Cut rabbit in serving pieces. Cover with water. Add sugar and onion. Season with salt and spice. Let stand in refrigerator 2 days. Remove rabbit; dry and dip in flour. Brown in hot oil. Gradually add 1 cup of vinegar water.Cover and simmer 1 hour or until tender. Remove meat to hot platter. Thicken liquid for gravy.
