2 lbs. Boneless Beef in 1" cubes
3 stalks Celery in 2" cubes
5 or 6 Carrots in 1" pieces
2 medium Onions quartered
1 pint Tomatoes
4 medium Potatoes quartered
1/2 C.Water
1/3 C. Quick Tapioca
1 tbsp. Salt
1/4 tsp. Pepper
1 tbsp. Sugar
1 can Green Beans - reserve liquid and refrigerate beans.

Spread meat in bottom of roaster or large pan. Sprinkle tapioca over meat. Add celery, carrots, onions, tomatoes and potatoes. Combine liquid drained from beans, water and seasonings. Pour over vegetables and meat in pan. Cover tightly with lid or foil and bake at 300 degrees for 4 - 41/2 hours or at 275 degrees for 41/2 - 6 hours.
Refrigerate drained beans and stir into stew when done. For thicker stew use 1/2 cup tapioca.
