3 c. cubed cooked beef
2 c. carrot slices
4-5 potatoes, peeled and quartered
2 c. water
1 c. tomato juice
1 med. onion
1 tsp. salt
1 pkg. beef stew seasoning mix
2 beef bouillon cubes or 2 tsp. instant bouillon

In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer covered for 35 or 40 minutes until vegetables are tender and flavors well blended. Serve hot.

For a flavor variation, use 1/2 cup red wine and 1 1/2 cups water for the 2 cups of water.
