2-3 lb chuck roast or sirlion
1 1/2 tsp ground cumin
1 tsp ancho chili powder
salt
pepper
2 tbsp olive oil
1/2 medium onion
1 green bell pepper
1 red bell pepper
2 cloves garlic, minced
1 14.5 oz can crushed tomatoes
3 tbsp ketchup
1 tbsp apple cider vinegar
3 tbsp pimiento-stuffed olives
2 cups cooked rice, to serve

Directions:

Heat tbsp oil in saucepan on a medium-high burner. Season chuck roast with cumin, chili powder, salt, and pepper. Brown roast on all sides, remove from pan and place in 6 qt slow cooker.

Add tbsp of oil to pan, and add onion and bell peppers, and reduce heat to medium. When the vegetables are just soft, remove from pan and place in slow cooker.

Add garlic, tomatoes, ketchup, and vinegar to slow cooker and cook on low for 8 hours, until meat can easily be shredded.

Remove meat and shred, then return to slow cooker. Add olives and stir to combine.

Serve with rice.
