1/4 c. butter or margarine
2 medium apples, peeled, cored and thinly sliced
1 medium onion, diced
1 medium red cabbage, shredded (or 8 c.shredded)
1 c. water
1/2 c. red wine vinegar
1/3 c. sugar
1 1/2 tsp. salt
1/8 tsp. pepper
1 bay leaf

Directions:
Directions:
Heat butter in a 3 quart saucepan. Cook the apples and onion in the hot butter until tender. About 10 minutes. Add cabbage, water, red wine vinegar, sugar, salt, pepper and bay leaf. Heat mixture to boiling. Reduce heat to low, cover and simmer 40 minutes or until cabbage is very tender, stirring occasionally. To serve, discard bay leaf. Begin 1 hr. before dinner or cook the night before and reheat.
