"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
In bread machine pan, place the first 10 ingredients in the order listed. Select dough setting (check dough after 5 minutes of mixing; add a little more water or flour if needed). Just before final kneading (there may be an alarm), add coconut.

When dough cycle is complete, turn dough onto a lightly floured surface. Cover with plastic wrap; let rest for at least 10 minutes. Divide into 15 portions; roll each into a ball. Place in a greased 13" x 9" x 2" baking pan. Cover and let rise in a warm place for 45 minutes or until doubled. Bake at 375º for 15-20 minutes or until golden brown.
