24 tomatoes ( peels removed and cored, chopped into small pieces)
3 c. celery (chopped)
6 c. onion (chopped)
½ c. pickling salt
½ c. sugar
2 c. vinegar
4 Tbsp. Mustard seed
1 tsp. Cayenne pepper

Add:
3 chopped green/red peppers
12 oz. tomato paste
20 hot peppers (or to taste)

Directions:
Directions:
Combine first eight ingredients into a large pot. Bring to a boil and simmer at the boil for 45 min. Stirring often.

Add the last 3 ingredients.

Cook for another 10 minutes. Bottle and seal in sterilized and heated jars.

This is a great Salsa Recipe and it has been given to many friends and family. This is a recipe that I made with my Mom (Kay) and sister. Pat and I now make this almost every year.

I am always unsure about what "24 tomatoes" means but I usually use tomatoes from the Farmer's Market and guess to what the volume of "24 tomatoes" is. I have also used roasted tomatoes which gives the Salsa a different flavor.
