2 T 30 mL Onions, small dice
2 T 30 mL Butter
1 cup 250 mL Mushrooms, sliced
1/2 cup 125 mL White wine, dry
2 T 30 mL Brandy (Optional)
2 T 30 mL Tomatoes, finely diced
1 cup 250 mL Brown Sauce (Espagnol)

Directions:
Directions:
1. Cook Onion in butter until very tender.
2. Add Mushrooms and cook 5 minutes.
3. Add Wine and Brandy and reduce by half.
4. Add diced Tomatoes and Brown sauce.
5. Cook 5 minutes, then season to taste.
