1 lb. whole milk Ricotta cheese
1/2 tsp. salt
1 egg
1 1/2 cup flour

Directions:
Directions:
1. In a large bowl, mix egg and salt until blended and then whisk in Ricotta cheese until smooth.
2. Place a scoop of Ricotta mixture, about the size of your fist, on a lightly-floured area.
3. Sprinkle with flour and begin to roll until the Ricotta forms a "snake" the diameter of your finger.
4. Cut the snake into 1" pieces. Place on floured cookie sheet. Refrigerate.

To cook:
1. Bring 3 quarts of salted water to a boil. Cook the gnocchi for 2-3 minutes or until it rises to the top.
