2 lbs. tripe, cleaned and washed, can cut into 1-2" pieces or leave whole
1 Tbs. Olive Oil
1-2 cups diced celery
2 cups diced onions
1 bay leaf
salt and pepper
fresh basil
crushed garlic or garlic powder
tomato gravy

Directions:
Directions:
1. Place onions, garlic, celery, oil and bay leaf in pot. Add some salt and pepper.
2. Saute till soft but not brown.
3. Add tripe and about 2 cups of water. (Mom used a pressure cooker, but can be done in a pot with lid). Boil until tripe is half cooked through.
4. Drain water and add gravy and a little more water (about 1/4-1/2 cup).
5. Bring to boil and simmer about 1/2 - 1 hour until tripe absorbs the gravy.
