1- 11/2 lb flank steak
1/4 c oil
1/4 c red wine or cider vinegar
1 T Worcestershire sauce
2 t soy sauce
1 t dry mustard
1 clove garlic, minced
1/2 t salt
1/4 t sugar
1/4 t dried summer savory leaves
Watercress sprigs for garnish
Lemon-Herb Butter:
1/3 c butter
1 1/2 T lemon juice
3 T parsley
3 T watercress
1 t Worcestershire sauce
1/4 t tarragon
dash white pepper

Directions:
Directions:
Place stead in a shallow dish. Shake together oil, sine, Worcestershire sauce, soy sauce, mustard, garlic, salt, sugar and savory. pour over steak, turning to coat well. Cover and refrigerate 8 hours or more- turn once or twice. Remove steak, reserving marinade. Place on rack in a broiler pan. Broil about 4 inches from heat, until well browned (about 6 minutes per side for rare), brushing occasionally with marinade. Slice thinly, cutting diagonally. Serve topped with thin slices of lemon-herb butter. Garnish with watercress.
Lemon- Herb Butter: beat butter until fluffy; gradually beat in lemon juice until well combined. Mix next 5 ingredients. Shape into a roll or cube, wrap, and chill to blend flavors.
Serves 4.
