4 C. Cooked Rice
4 C. Milk (scalded)
4 Eggs
1/2 C. Sugar
1 T. Cinnamon
1 tsp. Vanilla
1/2 C. Raisins

Directions:
Directions:
Place raisins in 1 cup boiling water and let set while preparing pudding.

Scald milk, add cooked rice and set aside. In buttered 2 qt. casserole dish, beat eggs. Add sugar, cinnamon and vanilla to beaten eggs, mix well. Slowly add rice mixture to eggs. Drain raisins and add. Place casserole dish in pan with about 1/2 inch water and bake at 350 degrees for forty-five to 60 minutes. Pudding is done when knife inserted into center comes out clean.
