2 c. red lentils
1 large onion, diced
2 Tbsp. oil
1 Tbsp. curry paste
1 Tbsp. curry powder
1 tsp. turmeric
1 tsp. ground cumin
1/4-1 tsp. cayenne pepper
1 tsp. salt
1 clove garlic
1 tsp. ginger minced
1 14 oz. can crushed tomatoes

Directions:
Directions:
Wash lentils, place in a medium saucepan and cover with water. Simmer, covered, until tender. Meanwhile, saute onions in oil until tender. Combine all spices in a small container and add to the onions. Stir in the tomato sauce and allow to simmer. Once lentils are tender drain, if necessary, and add to the tomato/curry base. Serve with rice.
