1 lb. flank steak
1 tbsp. soy sauce
1 tbsp. oyster sauce
2 tbsp. cornstarch
1 tsp. sugar
2 cups fresh sugar peas
4 tbsp. vegetable oil
1/2 tsp. kosher salt
1/2 cup water chestnuts sliced
1/2 cup bamboo shoots sliced
1/2 cup sliced mushrooms
cooked rice

Directions:

Cut beef across the grain into thin slices. Mix soy sauce, cornstarch, and sugar together. Put beef in small bowl and pour soy sauce mixture over it. Marinate 1 hour.
Remove stems and strings from sugar peas, rinse and pat dry. Put 2 tbsp. oil in wok and heat. Add salt, sugar peas, water chestnuts, bamboo shoots, and mushrooms. Cook over medium heat, stirring about 2-4 minutes. Remove vegetables to a bowl. Add remaining oil and heat. Add beef mixture stirring constantly until done, about 5 minutes. Return vegetables to meat and mix thoroughly, cooking another 30-45 seconds. Serve over rice.
